I keep hearing people say 2026 is the year of the cabbage, and honestly? I couldn’t be happier. Cabbage is one of my favorite veggies to keep on hand.

I love it for easy salads, stir-fries, sheet-pan bakes, and soups. It’s wildly versatile, and it keeps really well in the fridge (like… weeks). That long shelf life is exactly why it’s a winter veggie MVP, and my go-to when I want something fresh without another midweek produce run.

And bonus: it’s usually one of the most budget-friendly veggies in the produce aisle.

Quick ways to use it this month:

  • Shred and toss into any winter salad or slaw
  • Sauté with garlic + a splash of soy sauce (or tamari) for a 5-minute side
  • Roast wedges with olive oil + salt until caramelized
  • Add to soups/stews
